Cornmeal pancakes

  • 1 cup cornmeal
  • 3/4 tsp salt
  • 1 tbs honey, OR
  • 1 tbs sugar, OR
  • 1 cup water, boiling
  • 1/2 cup milk
  • 1 egg
  • 2 tbs butter, melted
  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  1. Stir the water into the cornmeal, salt, and sugar or honey. Let rest, covered, 10 minutes.
  2. Beat together the egg and milk, then whisk in the melted butter. Combine with the cornmeal mixture.
  3. Sift together the flour and baking powder, then stir into the cornmeal mixture just until mixed.
  4. Grease a hot (350 °F) griddle with butter. Use about 1/4 cup of batter per pancake. Fry until bubbles break on the surface, then flip over and fry a little longer until cooked through.
Serve with maple syrup.
