Pad Thai Sauce

For 2 1/2 cups
  • 1 tbs oil
  • 2 cloves garlic, pressed
  • 1 cup tamarind concentrate
  • 1 cup fish sauce
  • 1 cup palm sugar, OR
  • 1/2 cup brown sugar AND 1/2 cup white sugar AND
  • 1/4 cup(approximately) sriracha sauce
  • 1/4 cup white vinegar
  1. Heat the oil over medium high heat. Add the garlic and stir just until the aroma blooms, about 15 seconds. Garlic should only start to brown.
  2. Add the tamarind concentrate, fish sauce, and sugar. Bring to a gentle boil, stirring as needed to prevent burning.
  3. Add the sriracha sauce, tasting to to ensure the right amount.
  4. Remove from heat and stir in the vinegar. Cool.

Storage Instructions

Store covered in the refrigerator.
