- Cook the pasta until al dente.
- While the pasta is cooking, chop the radicchio finely.
- Melt the butter in a saucepan. Sauté the radicchio over medium heat in the butter until it darkens.
- Off heat, add the gorgonzola cheese to the radicchio and melt in. Drain the pasta and combine with the radicchio mixture.
Serve immediately with fresh pepper and Parmesan cheese. This will serve six as a pasta dish.
