Chocolate Sorbet


  • 3 1/3 cups water
  • 1 1/8 cups sugar
  • 1 3/4 cups cocoa
  • 5/8 cup crème de cacao


  1. Put the water and sugar into a saucepan. Cook together 4 minutes to dissolve the sugar and make a syrup.
  2. Add the cocoa and mix well. Return to a boil, then reduce to a simmer and cook 5 minutes. Cool.
  3. Add crème de cacao. Freeze in an ice cream freezer.
