An extremely healthy sandwich that makes up for a lot of culinary sins the rest of the day.
Ingredients
- 2 slices
whole wheat bread
- 2 tbs goat cheese, softened
- 1 tsp yellow mustard
- cucumber, thinly sliced
- red onion, thinly sliced
- tomato, sliced
- 1/4 cup alfalfa sprouts
- 1 leaf lettuce
- salt
Steps
- Spread goat cheese on one slice of bread and mustard on the other.
- Layer cucumber slices a couple layers thick over the goat cheese, and sprinkle very lightly with salt. Repeat with a layer of tomato slices.
- Add onion, sprouts, and lettuce, then close the sandwich.
Slice in half to serve.
