Avocado Carrot Sandwich

An extremely healthy sandwich that makes up for a lot of sins.

  • 2 slices Whole Wheat Bread
  • 1/2 avocado
  • 1 tsp yellow mustard
  • 1 medium carrot, coarsly grated
  • dill pickle, sliced
  • red onion, thinly sliced
  • tomato, sliced
  • 1 leaf lettuce
  1. Slice the avocado and lay evenly over one slice of bread. Spread the mustard on the other.
  2. Pile the grated carrot over the avocado.
  3. Top with pickle, onion, tomato, and lettuce and close the sandwich.
Slice in half to serve.
