Consisting purely of boiled down cider, this jelly has a compelling sweet tart taste. The pectin from the apples allows it to form a true jelly. But it takes a lot of cider to yield a little jelly.

Steps
- Put cider in a wide pan.
- Bring to a boil. Reduce heat to keep just at a boil.
- Boil until cider reduces to about 1/8 its original volume and measures 225 °F.
- Remove from heat and filter through a coffee filter or paper towel.
- Transfer to canning jars and seal.
