Roasted Zucchini Planks

Ingredients

  • zucchini
  • oil
  • salt

Steps

  1. Heat a griddle over high heat until smoking hot.
  2. Slice zucchini lengthwise into planks, about 1 1/2 inches wide by 5 inches long by 1/8 inch thick.
  3. Brush griddle with a thin layer of oil, then lay zucchini slices on it, as close together as possible.
  4. Fry zucchini slices without moving them until browned on bottom, about 1 1/2 minutes.
  5. With a fork or tongs, turn all the slices over and fry an additional 30 seconds to 1 minute, until browned.
  6. Remove slices to a plate and start the next batch. Slices will not look completely done but wll finish cooking from their residual heat. Sprinkle lightly with salt and let cool.

Storage Instructions

Store covered in the refrigerator.
