- zucchini
- oil
- salt
Steps
- Heat a griddle over high heat until smoking hot.
- Slice zucchini lengthwise into planks, about 1 1/2 inches wide by 5 inches long by 1/8 inch thick.
- Brush griddle with a thin layer of oil, then lay zucchini slices on it, as close together as possible.
- Fry zucchini slices without moving them until browned on bottom, about 1 1/2 minutes.
- With a fork or tongs, turn all the slices over and fry an additional 30 seconds to 1 minute, until browned.
- Remove slices to a plate and start the next batch. Slices will not look completely done but wll finish cooking from their residual heat. Sprinkle lightly with salt and let cool.
