Squash and Roasted Pepper Sandwich

Ingredients

  • 2 slices
    whole wheat bread
  • Fontina or Brie cheese
  • 1 tsp yellow mustard

  • zucchini planks
  • 1/2 roasted red pepper
  • red onion, thinly sliced
  • 1 leaf lettuce

Steps

  1. Place slices of cheese on one piece of bread and mustard on the other.
  2. Place a couple layers of zucchini on the cheese, then add the roasted red pepper.
  3. Add the onion and lettuce and close the sandwich.

Slice in half to serve.
