Ingredients
- 2 slices
whole wheat bread
- Fontina or Brie cheese
- 1 tsp yellow mustard

zucchini planks
- 1/2 roasted red pepper
- red onion, thinly sliced
- 1 leaf lettuce
Steps
- Place slices of cheese on one piece of bread and mustard on the other.
- Place a couple layers of zucchini on the cheese, then add the roasted red pepper.
- Add the onion and lettuce and close the sandwich.
Slice in half to serve.
