Squash and Roasted Pepper Sandwich

2 slices
Whole Wheat Bread
Fontina or Brie cheese
1 tsp yellow mustard
Roasted Zucchini planks
1/2 roasted red pepper
red onion , thinly sliced
1 leaf lettuce
Place slices of cheese on one piece of bread and mustard on the other.
Place a couple layers of zucchini on the cheese, then add the roasted red pepper.
Add the onion and lettuce and close the sandwich.
Slice in half to serve.
