Vegetarian Sandwich

An extremely healthy sandwich that makes up for a lot of culinary sins the rest of the day.

  • 2 slices Whole Wheat Bread
  • 2 tbs goat cheese, softened
  • 1 tsp yellow mustard
  • cucumber, thinly sliced
  • red onion, thinly sliced
  • tomato, sliced
  • 1/4 cup alfalfa sprouts
  • 1 leaf lettuce
  • salt
  1. Spread goat cheese on one slice of bread and mustard on the other.
  2. Layer cucumber slices a couple layers thick over the goat cheese, and sprinkle very lightly with salt. Repeat with a layer of tomato slices.
  3. Add onion, sprouts, and lettuce, then close the sandwich.
Slice in half to serve.
