Ingredients
- 1 cup cornmeal
- 3/4 tsp salt
- 1 tbs honey, OR 1 tbs sugar
- 1 cup water, boiling
- 1/2 cup milk
- 1 egg
- 2 tbs butter, melted
- 1/2 cup all-purpose flour
- 2 tsp baking powder
Steps
- Stir the water into the cornmeal, salt, and sugar or honey. Let rest, covered, 10 minutes.
- Beat together the egg and milk, then whisk in the melted butter. Combine with the cornmeal mixture.
- Sift together the flour and baking powder, then stir into the cornmeal mixture just until mixed.
- Grease a hot (350 °F) griddle with butter. Use about 1/4 cup of batter per pancake. Fry until bubbles break on the surface, then flip over and fry a little longer until cooked through.
Serve with maple syrup.
