Granola

I think this is much healthier than other granola recipes I've seen (half the sugar and a quarter the fat), and I like it not to be overwhelmed with ingredients.

Ingredients

  • 1 kg (2 lb) rolled oats
  • 200 g (6 oz) nuts
  • 100 g (3 oz) sunflower seeds
  • 200 g (1 cup) water
  • honey, OR
  • 200 g (1 cup) sugar AND 75 g (1/4 cup) molasses
  • 20 g (1 tbs) salt
  • 75 g (1/2 cup) peanut oil
  • 10 g (1 tbs) vanilla extract
  • 200 g (6 oz) dried fruit

Steps

  1. Preheat oven to 350 °F.
  2. Bring the water to a boil. Add the salt and the honey or sugar and molasses. Stir until completely dissolved. Add the peanut oil.
  3. Chop the nuts into small pieces.
  4. Combine the rolled oats, nuts, and seeds.
  5. Combine the sugar mixture with the oat mixture. Stir well to combine thoroughly.
  6. Grease a large baking pan. Spread the oat mixture evenly in the pan. Place in oven and toast for 15 minutes.
  7. Stir the mixture well, being careful to mix the edges into the center.
  8. Reduce oven heat to 275 °F and continue toasting, stirring every 15 minutes, for 1 to 1 1/2 hours, until lightly browned.
  9. Cool. When completely cool, mix in the dried fruit.

Store tightly covered.
