Crumb Topping for Pie

Use this in place of the top crust on a pie. The filling must be precooked before pouring into the shell.

Ingredients

For Crust for one pie

  • 115 g (3/4 cup) flour
  • 155 g (3/4 cup) sugar
  • 2.5 g (1/4 tsp) salt
  • 2 g (1/2 tsp) ground cinnamon
  • 80 g (6 tbs) butter

Steps

  1. Stir together the dry ingredients.
  2. Work in the butter until the mixture forms crumbs with pea-sized pieces.
  3. Fill pie with pre-cooked filling, and sprinkle crumbs evenly on top.
  4. Bake at 425 °F 15 minutes, then reduce heat to 350 °F and continue to bake until crust browns, approximately 25 minutes.
