Ingredients
- 2 cups (250 g) all purpose flour
- 2 tsp (15 g) baking powder
- 1 tsp (5 g) salt
- 2 tbs (25 g) shortening
- 3/4 cup (90 g) water
Steps
- Combine flour, baking powder, and salt.
- Add shortening and incorporate into the flour to make small crumbles.
- Slowly add the warm water to the flour, stirring to form dough.
- Turn dough out onto a lightly floured counter.
- Knead dough for about 5 minutes, or until soft and elastic.
- Cover and let rest for 1 hour.
- Divide into 12 balls for 6-inch tortillas, 8 balls for 8-inch tortillas, or 4 balls for 12-inch tortillas.
- Roll each ball 3 mm thick.
- Heat a griddle to 500 °F.
- Place each tortilla on griddle and bake 30 seconds, flip, bake another minute, then flip and bake first side another 30 seconds. Bake as many at a time as practical.
- Remove from griddle andcover to allow steam to finish cooking while baking the remaining tortillas. Add each one to the covered pile as they're done.
Serve warm.
Storage Instructions
Wrap tortillas well and freeze. They may be reheated in the microwave or over steam.
