Lemon Curd

Ingredients

For 1 cup

  • 2/3 cup (130 g) sugar
  • 2 (110 g) eggs
  • 6 tbs (80 g) lemon juice
  • zest of two lemons, OR 2 drops lemon oil
  • 4 tbs (50 g g) butter

Steps

  1. Add sugar and eggs to a saucepan and beat together until smooth.
  2. Stir in lemon juice and zest.
  3. Heat over medium heat, stirring constantly, until slightly thickened and 175 °F.
  4. Remove from heat and immediately strain through a fine strainer into a mixing bowl.
  5. Stir in butter, allowing it to melt in and emulsify the mixture.
  6. Put in a storage jar and cover immediately, or cover with plastic wrap to keep a skin from forming while it cools.
