Ingredients
For 1 cup
- 2/3 cup (130 g) sugar
- 2 (110 g) eggs
- 6 tbs (80 g) lemon juice
- zest of two lemons, OR 2 drops lemon oil
- 4 tbs (50 g g) butter
Steps
- Add sugar and eggs to a saucepan and beat together until smooth.
- Stir in lemon juice and zest.
- Heat over medium heat, stirring constantly, until slightly thickened and 175 °F.
- Remove from heat and immediately strain through a fine strainer into a mixing bowl.
- Stir in butter, allowing it to melt in and emulsify the mixture.
- Put in a storage jar and cover immediately, or cover with plastic wrap to keep a skin from forming while it cools.
