Sourdough Waffles

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 cups buttermilk
  • 2 tbs sugar
  • 1 cup sourdough starter
  • 2 eggs
  • 4 tbs butter, melted
  • 3/4 tsp salt
  • 1 tsp baking soda

Steps

  1. Combine flours, sugar, buttermilk, and sourdough starter. Mix until smooth.
  2. Let mixture ferment, covered, overnight.
  3. Beat in eggs, then the butter, salt, and baking soda. The batter will rise when the baking soda is added; don't overmix after this point.
  4. Bake in waffle iron.
