Tofu "Egg" Salad

This is a vegan sandwich filling that is very similar to egg salad. I don't usually go for "tasty fakes" but this is a good way to substitute some tofu into the diet. The silken tofu, coloured with turmeric, forms the base of the "yolks" and adds enough moisture that a binder like mayonnaise is not needed. The firm tofu, flavoured by the onion and vinegar, forms the "whites".

Ingredients

For 4 servings

  • 200 g silken tofu
  • 1 tbs yellow mustard
  • 1/2 tsp turmeric
  • 1/8 tsp cayenne powder (optional)
  • 1/2 tsp salt
  • 1 tbs flax oil
  • 1 1/2 tsp cider vinegar
  • 300 g firm tofu
  • 60 g (1/4) onion

Steps

  1. Combine all ingredients except the firm tofu and onion. Puree in a food processor or mash together to a uniform paste.
  2. Finely dice the firm tofu and onion.
  3. Add the firm tofu and onion to the first mixture and stir together.
